  • ½cup raw almonds
  • 8celery stalks, thinly sliced on a diagonal, leaves separated
  • 6dates, pitted, coarsely chopped
  • 3tablespoons fresh lemon juice
  • Kosher salt and freshly ground black pepper
  • 2ounces Parmesan, shaved
  • ¼cup extra-virgin olive oil
  • Crushed red pepper flakes

Preparation

  • Preheat oven to 350°. Spread out almonds on a small rimmed baking sheet; toast, stirring occasionally, until golden brown, 8–10 minutes. Let cool; coarsely chop.
  • Toss almonds, celery, celery leaves, dates, and lemon juice in a medium bowl; season with salt and pepper. Add Parmesan and oil and toss gently; season with red pepper flakes.

  • 2red or green Thai chiles, lightly smashed
  • 2garlic cloves, lightly smashed
  • ½cup fresh lime juice
  • ⅓cup fish sauce
  • 2tablespoons palm sugar or light brown sugar
  • 1medium bunch kale, ribs and stems removed, leaves thinly sliced
  • 2celery stalks, thinly sliced on a diagonal
  • 1bunch small scallions, thinly sliced on a diagonal
  • ¾cup fresh cilantro leaves with tender stems
  • ¾cup fresh mint leaves

Preparation

  • Whisk chiles, garlic, lime juice, fish sauce, palm sugar, and 2 Tbsp. water in a large bowl. Let sit 5 minutes; remove chiles and garlic.
  • Add kale, celery, scallions, cilantro, mint, and basil to dressing and toss to coat (salad should be very heavily dressed).
